High Protein Mushroom and Tofu Scramble Recipe (Breakfast) — a healthy halal vegetarian recipe with 240 calories and 22g protein per serving.
Ingredients
- 14-16 oz extra-firm tofu, pressed and crumbled
- 8 oz mushrooms (cremini or button), sliced
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 2 cups fresh spinach
- 2 tbsp nutritional yeast
- 1 tsp turmeric
- 1 tsp smoked paprika or cumin
- ½ tsp black salt (kala namak) for eggy flavor (optional)
- 2 tbsp olive oil
- Salt, black pepper, fresh cilantro or parsley
- Optional: halal hot sauce
Instructions
- 1Heat oil in a large skillet over medium heat. Sauté onion and mushrooms for 5-6 minutes until golden.
- 2Add garlic and bell pepper; cook 2 minutes.
- 3Crumble in tofu, add turmeric, paprika, nutritional yeast, and black salt. Stir-fry 5-7 minutes.
- 4Fold in spinach until wilted. Season to taste. Serve hot with whole grain toast or in wraps.
