Ingredients
  • 14-16 oz extra-firm tofu, pressed and crumbled
  • 8 oz mushrooms (cremini or button), sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 cups fresh spinach
  • 2 tbsp nutritional yeast
  • 1 tsp turmeric
  • 1 tsp smoked paprika or cumin
  • ½ tsp black salt (kala namak) for eggy flavor (optional)
  • 2 tbsp olive oil
  • Salt, black pepper, fresh cilantro or parsley
  • Optional: halal hot sauce
Instructions
  1. 1Heat oil in a large skillet over medium heat. Sauté onion and mushrooms for 5-6 minutes until golden.
  2. 2Add garlic and bell pepper; cook 2 minutes.
  3. 3Crumble in tofu, add turmeric, paprika, nutritional yeast, and black salt. Stir-fry 5-7 minutes.
  4. 4Fold in spinach until wilted. Season to taste. Serve hot with whole grain toast or in wraps.
