High Protein Kidney Bean Curry (Rajma) Recipe — a healthy halal vegetarian recipe with 320 calories and 18g protein per serving.
Ingredients
- 2 (15 oz) cans kidney beans, drained and rinsed
- 1 large onion, finely chopped
- 3 garlic + 1 inch ginger + 1 green chili
- 2 tomatoes or 1 can diced tomatoes
- 1 tsp each: cumin seeds, turmeric, coriander
- 1 tsp garam masala
- ½ tsp chili powder
- 2 tbsp oil or ghee
- Fresh cilantro
- Salt to taste
Instructions
- 1Heat oil, add cumin seeds. Sauté onion until golden. Add ginger-garlic-chili paste; cook 1 min.
- 2Add tomatoes and spices; cook until oil separates (5-7 min).
- 3Add kidney beans and 1-1½ cups water. Simmer 15-20 minutes. Mash some beans for thickness.
- 4Finish with garam masala and cilantro. Serve with rice.
