Ingredients
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • 1 large onion, finely chopped
  • 3 garlic + 1 inch ginger + 1 green chili
  • 2 tomatoes or 1 can diced tomatoes
  • 1 tsp each: cumin seeds, turmeric, coriander
  • 1 tsp garam masala
  • ½ tsp chili powder
  • 2 tbsp oil or ghee
  • Fresh cilantro
  • Salt to taste
Instructions
  1. 1Heat oil, add cumin seeds. Sauté onion until golden. Add ginger-garlic-chili paste; cook 1 min.
  2. 2Add tomatoes and spices; cook until oil separates (5-7 min).
  3. 3Add kidney beans and 1-1½ cups water. Simmer 15-20 minutes. Mash some beans for thickness.
  4. 4Finish with garam masala and cilantro. Serve with rice.
