Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced
- 3 garlic cloves, minced
- 1.25 cups green lentils, rinsed
- 6 cups vegetable broth
- 1 tsp cumin, 1 tsp Italian seasoning
- 1 large bunch kale, chopped
- Lemon juice, salt & pepper
Instructions
- 1Sauté onion and carrots 6 min. Add garlic and spices 1 min.
- 2Add lentils and broth. Simmer 30 min.
- 3Stir in kale and cook 5-10 min. Finish with lemon juice.
