Ingredients
- 3 ripe bananas, mashed (about 1¼ cups)
- 1 cup plain Greek yogurt (halal)
- 2 large eggs
- ⅓ cup maple syrup or honey
- ¼ cup olive oil or melted coconut oil
- 1 tsp vanilla
- 1½ cups whole wheat flour (or mix with oat flour)
- ½ cup vanilla or unflavored protein powder (whey/plant-based, halal)
- 1 tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- Optional: ½ cup walnuts or halal chocolate chips
Instructions
- 1Preheat to 350°F (175°C). Grease 9x5 loaf pan.
- 2Mix mashed bananas, yogurt, eggs, sweetener, oil, vanilla.
- 3Whisk dry ingredients separately, then combine until just mixed. Fold in nuts/chips.
- 4Pour into pan. Bake 50-60 min until toothpick clean. Cool before slicing.
