Ingredients
  • 2 cups shelled edamame (frozen, thawed)
  • 1 (15 oz) can chickpeas, drained
  • ½ cup fresh parsley & cilantro
  • 3 garlic cloves, 1 small shallot
  • 2 tsp cumin, 1 tsp coriander, salt & pepper
  • 4-5 tbsp chickpea flour, olive oil spray
Instructions
  1. 1Preheat oven 400°F. Pulse all ingredients in food processor to coarse texture.
  2. 2Form into 12-16 balls/patties. Place on baking sheet, spray with oil.
  3. 3Bake 22-28 min, flipping once until golden. Serve in salad bowls or wraps.
