High Protein Edamame Falafel (Baked) — a healthy halal recipe with 420 calories and 22g protein per serving.
Ingredients
- 2 cups shelled edamame (frozen, thawed)
- 1 (15 oz) can chickpeas, drained
- ½ cup fresh parsley & cilantro
- 3 garlic cloves, 1 small shallot
- 2 tsp cumin, 1 tsp coriander, salt & pepper
- 4-5 tbsp chickpea flour, olive oil spray
Instructions
- 1Preheat oven 400°F. Pulse all ingredients in food processor to coarse texture.
- 2Form into 12-16 balls/patties. Place on baking sheet, spray with oil.
- 3Bake 22-28 min, flipping once until golden. Serve in salad bowls or wraps.
