High Protein Chicken Vegetable Soup — a healthy halal recipe with 300 calories and 33g protein per serving.
Ingredients
- 1 tbsp olive oil
- 1 lb boneless skinless halal chicken breast or thighs, cubed
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2-3 garlic cloves, minced
- 1 zucchini or handful spinach, chopped
- 6 cups halal chicken broth
- 1 tsp Italian seasoning, salt & pepper
- Optional: 1 cup cooked quinoa or beans for extra protein
Instructions
- 1Brown chicken in oil; remove and set aside.
- 2Sauté onion, carrots, celery 5-7 min. Add garlic.
- 3Return chicken, add broth and seasoning. Simmer 25-30 min. Add zucchini/spinach last 5 min.
- 4Serve hot.
