Ingredients
- 1 tbsp olive oil
- 1.5 lbs halal chicken thighs, diced
- 1 onion, diced; 3 carrots, sliced; 3 celery, sliced
- 3 garlic cloves, minced
- ¾ cup pearl barley, rinsed
- 7 cups halal chicken broth
- 1 tsp thyme, bay leaf, salt & pepper
- 2 cups spinach
Instructions
- 1Brown chicken in oil; remove. Sauté onion, carrots, celery 7 min. Add garlic.
- 2Return chicken, add barley, broth, thyme, and bay leaf. Simmer 40-45 min.
- 3Stir in spinach until wilted. Remove bay leaf and serve.
