Ingredients
  • 1 tbsp olive oil
  • 1.5 lbs halal chicken thighs, diced
  • 1 onion, diced; 3 carrots, sliced; 3 celery, sliced
  • 3 garlic cloves, minced
  • ¾ cup pearl barley, rinsed
  • 7 cups halal chicken broth
  • 1 tsp thyme, bay leaf, salt & pepper
  • 2 cups spinach
Instructions
  1. 1Brown chicken in oil; remove. Sauté onion, carrots, celery 7 min. Add garlic.
  2. 2Return chicken, add barley, broth, thyme, and bay leaf. Simmer 40-45 min.
  3. 3Stir in spinach until wilted. Remove bay leaf and serve.
