Ingredients
- 1 cup red lentils, rinsed
- 4 cups cauliflower florets
- 1 onion, chopped
- 3 garlic + 1 inch ginger, minced
- 1 (14.5 oz) can diced tomatoes
- 1 tsp each: turmeric, cumin, coriander
- ½ tsp garam masala
- 2 tbsp ghee or oil
- Fresh cilantro
- Salt to taste
Instructions
- 1Sauté onion in oil until soft. Add ginger-garlic and spices; cook 1 minute.
- 2Add tomatoes, lentils, cauliflower, and 4 cups water. Bring to boil, then simmer 20-25 minutes until lentils break down and cauliflower is tender.
- 3Mash slightly for creaminess. Garnish with cilantro. Serve with rice or flatbread.
