Ingredients
  • 1 cup whole black lentils (urad dal), soaked 4-6 hours
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup full-fat Greek yogurt or coconut cream
  • 1 large onion, finely chopped
  • 4 garlic cloves + 1 inch ginger, minced
  • 2 tsp garam masala
  • 1 tsp each: cumin, coriander, turmeric
  • ½ tsp chili powder or Kashmiri red chili
  • 3 tbsp ghee or butter
  • Fresh cilantro and ginger julienne for garnish
  • Salt to taste
Instructions
  1. 1Pressure cook or simmer soaked lentils in 4 cups water until very soft and creamy (30-40 minutes).
  2. 2In a separate pan, heat ghee, sauté onion until golden. Add ginger-garlic, spices; cook 1-2 minutes.
  3. 3Add tomatoes; cook until oil separates. Stir in cooked lentils and simmer 10 minutes.
  4. 4Mix in yogurt/cream off heat. Garnish with cilantro and extra ghee. Serve with rice or naan.
