Ingredients
- 1 cup whole black lentils (urad dal), soaked 4-6 hours
- 1 (14.5 oz) can diced tomatoes
- 1 cup full-fat Greek yogurt or coconut cream
- 1 large onion, finely chopped
- 4 garlic cloves + 1 inch ginger, minced
- 2 tsp garam masala
- 1 tsp each: cumin, coriander, turmeric
- ½ tsp chili powder or Kashmiri red chili
- 3 tbsp ghee or butter
- Fresh cilantro and ginger julienne for garnish
- Salt to taste
Instructions
- 1Pressure cook or simmer soaked lentils in 4 cups water until very soft and creamy (30-40 minutes).
- 2In a separate pan, heat ghee, sauté onion until golden. Add ginger-garlic, spices; cook 1-2 minutes.
- 3Add tomatoes; cook until oil separates. Stir in cooked lentils and simmer 10 minutes.
- 4Mix in yogurt/cream off heat. Garnish with cilantro and extra ghee. Serve with rice or naan.
