High Protein Beef Vegetable Soup — a healthy halal recipe with 320 calories and 32g protein per serving.
Ingredients
- 1.5 lbs halal beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced; 3 carrots, sliced; 3 celery, sliced
- 3 garlic cloves, minced
- 1 (15 oz) can diced tomatoes
- 7 cups halal beef broth
- 2 cups mixed vegetables (green beans, peas, zucchini)
- 1 tsp thyme, bay leaf, salt & pepper
Instructions
- 1Brown beef in oil in batches; set aside. Sauté onion, carrots, celery 7 min. Add garlic.
- 2Return beef, add tomatoes, broth, thyme, and bay leaf. Simmer 50-60 min.
- 3Add remaining vegetables and cook 15-20 min more. Remove bay leaf and serve.
