Ingredients
  • 1.5 lbs halal beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, diced; 3 carrots, sliced; 3 celery, sliced
  • 3 garlic cloves, minced
  • 1 (15 oz) can diced tomatoes
  • 7 cups halal beef broth
  • 2 cups mixed vegetables (green beans, peas, zucchini)
  • 1 tsp thyme, bay leaf, salt & pepper
Instructions
  1. 1Brown beef in oil in batches; set aside. Sauté onion, carrots, celery 7 min. Add garlic.
  2. 2Return beef, add tomatoes, broth, thyme, and bay leaf. Simmer 50-60 min.
  3. 3Add remaining vegetables and cook 15-20 min more. Remove bay leaf and serve.
