Ingredients
- 2 carrots, 2 zucchini, 1 eggplant, 1 potato, 1 bell pepper (all cubed)
- 1 large onion, 4 garlic cloves, 1 tbsp ginger
- 1 (15 oz) can chickpeas
- 1 (28 oz) can diced tomatoes + 2 cups vegetable broth
- 2 tsp ras el hanout or Moroccan spice blend, 1 tsp cumin, ½ tsp cinnamon
- 3 tbsp olive oil, fresh cilantro, lemon wedges
Instructions
- 1Heat oil in a large pot. Sauté onion 5 min. Add garlic, ginger, and spices for 1 min.
- 2Add all vegetables and chickpeas. Stir to coat. Pour in tomatoes and broth.
- 3Bring to simmer, cover, and cook 30-35 min until vegetables are tender but not mushy.
- 4Finish with fresh cilantro and lemon. Serve with couscous or bread.
