Ingredients
- 1 (15-oz) can chickpeas, drained
- 1 (15-oz) can kidney beans, drained
- 1 (15-oz) can cannellini beans, drained
- 1 red bell pepper, diced
- 2 celery stalks, diced
- ½ red onion, diced
- ¼ cup fresh parsley
- Dressing: ⅓ cup olive oil, juice of 2 lemons, 1 tbsp Dijon mustard, 1 garlic clove, salt & pepper.
Instructions
- 1Rinse and drain all beans well.
- 2Whisk dressing. Combine beans with vegetables and parsley.
- 3Pour dressing over and toss thoroughly. Chill 15 min before serving.
