High Fiber Lentil Salad Recipe (Warm Mediterranean) — a healthy halal recipe with 300 calories and 14g protein per serving.
Ingredients
- 1 cup green or brown lentils, rinsed
- 1 bay leaf
- 1 red bell pepper, diced
- 1 cucumber, diced
- 2 tomatoes, diced
- ½ red onion, diced
- ¼ cup fresh parsley & mint
- Optional: spinach or arugula
- Dressing: ¼ cup olive oil, juice of 1-2 lemons, 1 garlic clove, 1 tsp cumin, salt & pepper.
Instructions
- 1Simmer lentils with bay leaf in water ~20-25 min until tender but firm. Drain and keep warm.
- 2Mix warm lentils with veggies & herbs. Toss with dressing. Serve warm.
