Ingredients
  • 1 tbsp olive oil (or water for oil-free)
  • 1 large onion, diced
  • 3-4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder (mild)
  • 1 tsp cumin, 1 tsp turmeric, ½ tsp chili flakes (optional)
  • 2 (15 oz) cans chickpeas, drained & rinsed
  • 1 (15 oz) can diced tomatoes
  • 1 (13.5 oz) can full-fat coconut milk (or lite for lower fat)
  • 2 cups baby spinach
  • Juice of ½ lime, salt & pepper to taste
  • Fresh cilantro for garnish; serve with basmati rice or naan
Instructions
  1. 1Heat oil in a large pot over medium heat. Sauté onion 5 min until soft. Add garlic, ginger, and spices; cook 1 min until fragrant.
  2. 2Stir in tomatoes, chickpeas, and coconut milk. Bring to simmer and cook 15 min until thickened.
  3. 3Stir in spinach and lime juice until wilted. Adjust seasoning. Garnish and serve.
