Healthy Vegetarian Chickpea Curry (Easy One Pot) — a healthy halal recipe with 350 calories and 15g protein per serving.
Ingredients
- 1 tbsp olive oil (or water for oil-free)
- 1 large onion, diced
- 3-4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder (mild)
- 1 tsp cumin, 1 tsp turmeric, ½ tsp chili flakes (optional)
- 2 (15 oz) cans chickpeas, drained & rinsed
- 1 (15 oz) can diced tomatoes
- 1 (13.5 oz) can full-fat coconut milk (or lite for lower fat)
- 2 cups baby spinach
- Juice of ½ lime, salt & pepper to taste
- Fresh cilantro for garnish; serve with basmati rice or naan
Instructions
- 1Heat oil in a large pot over medium heat. Sauté onion 5 min until soft. Add garlic, ginger, and spices; cook 1 min until fragrant.
- 2Stir in tomatoes, chickpeas, and coconut milk. Bring to simmer and cook 15 min until thickened.
- 3Stir in spinach and lime juice until wilted. Adjust seasoning. Garnish and serve.
