  • 1 (15 oz) can chickpeas
  • 1 (15 oz) can diced tomatoes + 1-2 cups veg broth
  • Handful dried apricots or raisins (optional), fresh cilantro, lemon
Instructions
  1. 1Sauté onion, garlic, ginger, spices. Add veggies and cook 5 min.
  2. 2Add tomatoes, broth, chickpeas, and dried fruit. Simmer covered 25-30 min until tender.
