Healthy Vegetable Tagine (Moroccan Vegetarian) — a healthy halal recipe with 300 calories and 10g protein per serving.
Ingredients
- 2 tbsp olive oil
- 1 onion, 3 garlic cloves, 1-inch ginger
- 2 tsp ras el hanout or (cumin + coriander + cinnamon + paprika)
- 2 carrots, 1 sweet potato, 1 zucchini, 1 bell pepper, 1 eggplant (chunked)
- 1 (15 oz) can chickpeas
- 1 (15 oz) can diced tomatoes + 1-2 cups veg broth
- Handful dried apricots or raisins (optional), fresh cilantro, lemon
Instructions
- 1Sauté onion, garlic, ginger, spices. Add veggies and cook 5 min.
- 2Add tomatoes, broth, chickpeas, and dried fruit. Simmer covered 25-30 min until tender.
- 3Finish with lemon and herbs. Serve with couscous.
