Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery, diced
- 3 garlic cloves, minced
- 1 zucchini, diced; 1 cup green beans
- ¾ cup quinoa, rinsed
- 1 (15 oz) can diced tomatoes
- 6 cups vegetable broth
- 1 tsp Italian seasoning, salt & pepper
- Fresh parsley
Instructions
- 1Sauté onion, carrots, celery 7 min. Add garlic and remaining vegetables.
- 2Stir in quinoa, tomatoes, broth, and seasoning.
- 3Simmer 25-30 min until quinoa is fluffy. Garnish with parsley.
