Ingredients
- 1 zucchini, 1 bell pepper, 1 red onion, 8 oz mushrooms, cherry tomatoes
- 1 (15 oz) can chickpeas or 14 oz halloumi (halal), cubed

- 2 tsp za’atar or (oregano + cumin + paprika), salt & pepper
Instructions
- 1Cut vegetables into chunks. Whisk oil, lemon, garlic, and spices. Toss veggies and protein in marinade.

- 3Grill or broil 10-14 min, turning occasionally until charred and tender. Serve with tahini sauce and rice or salad.
