Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 1 carrot, diced
- 3 garlic cloves, minced
- 2 (28 oz) cans crushed tomatoes
- 5 cups vegetable or halal chicken broth
- ¾ cup orzo pasta
- 1 tsp dried basil, ½ tsp oregano, salt & pepper
- Fresh basil and lemon zest
Instructions
- 1Sauté onion and carrot 6 min. Add garlic 1 min.
- 2Add tomatoes, broth, and dried herbs. Simmer 10 min.
- 3Stir in orzo and cook 8-10 min until tender. Finish with fresh basil and lemon zest.
