Healthy Tahini Roasted Vegetable Bowl — a healthy halal recipe with 480 calories and 16g protein per serving.
Ingredients
- 1 cauliflower, 2 sweet potatoes, 2 carrots, 1 red onion (all cubed)
- 1 (15 oz) can chickpeas, drained
- 3 tbsp olive oil, 2 tsp za’atar or cumin + paprika, salt & pepper
- Tahini sauce: ¼ cup tahini, 2 tbsp lemon juice, 1 garlic clove, water to thin, salt
- Fresh parsley, quinoa or rice base
Instructions
- 1Preheat oven 425°F. Toss vegetables and chickpeas with oil and spices on two baking sheets.
- 2Roast 30-35 min, tossing halfway until caramelized.
- 3Whisk tahini sauce ingredients, adding water until pourable.
- 4Serve over quinoa with roasted veggies and generous tahini drizzle. Garnish with parsley.
