Ingredients
- 2 tbsp coconut oil
- 1 onion, chopped
- 3 garlic cloves, minced; 1 tbsp ginger, grated
- 2 large sweet potatoes, peeled and cubed
- 4 cups vegetable broth
- 1 (13.5 oz) can coconut milk
- ½ tsp turmeric, salt & pepper
- Fresh cilantro and lime
Instructions
- 1Sauté onion 5 min. Add garlic, ginger, and turmeric 1 min.
- 2Add sweet potatoes and broth. Simmer 25 min until soft.
- 3Blend smooth. Stir in coconut milk and heat gently. Serve with cilantro and lime.
