Healthy Sweet Potato Chickpea Curry — a healthy halal recipe with 380 calories and 14g protein per serving.
Ingredients
- 2 medium sweet potatoes, cubed
- 2 (15 oz) cans chickpeas, drained
- 1 onion, 3 garlic cloves, 1 tbsp ginger
- 1 (15 oz) can diced tomatoes + 1 (13.5 oz) can coconut milk
- 2 tbsp curry powder, 1 tsp cumin, ½ tsp turmeric, chili flakes
- 2 cups spinach, 1 tbsp oil, salt, fresh cilantro
Instructions
- 1Sauté onion in oil. Add garlic, ginger, and spices for 1 min.
- 2Add sweet potatoes, tomatoes, chickpeas, and coconut milk. Simmer 20-25 min until sweet potatoes are tender.
- 3Stir in spinach until wilted. Garnish with cilantro. Serve with rice.
