Healthy Sweet Potato Black Bean Salad — a healthy halal recipe with 320 calories and 12g protein per serving.
Ingredients
- 2 large sweet potatoes, cubed
- 2 (15-oz) cans black beans, drained
- 1 red bell pepper, diced
- ½ red onion, diced
- ¼ cup fresh cilantro, chopped
- 1 avocado, diced (optional)
- Dressing: ¼ cup olive oil, juice of 2 limes, 1 tsp cumin, ½ tsp smoked paprika, salt & pepper.
Instructions
- 1Preheat oven 425°F. Toss sweet potatoes with 1 tbsp oil, salt & pepper. Roast 25-30 min.
- 2Whisk dressing. Combine roasted sweet potatoes with black beans, pepper, onion, and cilantro.
- 3Gently fold in avocado and dressing.
