Healthy Spinach Paneer Curry (Light) — a healthy halal recipe with 320 calories and 22g protein per serving.
Ingredients
- 14 oz paneer (halal), cubed
- 1 large bag (10-12 oz) spinach, chopped
- 1 onion, 3 garlic cloves, 1 tbsp ginger
- 1 (15 oz) can diced tomatoes
- 2 tsp garam masala, 1 tsp cumin, ½ tsp turmeric, salt
- ½ cup yogurt or coconut milk, 1 tbsp oil
Instructions
- 1Lightly pan-fry paneer until golden. Set aside.
- 2Sauté onion, add garlic, ginger, and spices. Stir in tomatoes and cook 8 min.
- 3Add spinach and cook until wilted. Blend half the sauce for creaminess if desired.
- 4Return paneer and stir in yogurt/coconut milk. Simmer 5 min. Serve with rice.
