Healthy Roasted Vegetable Quinoa Salad — a healthy halal recipe with 310 calories and 9g protein per serving.

Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 zucchini, cubed
  • 1 eggplant, cubed
  • 1 red bell pepper, cubed
  • 1 red onion, wedged
  • 2 tbsp olive oil
  • ¼ cup fresh basil and parsley
  • Dressing: ⅓ cup olive oil, juice of 1 lemon, 1 tbsp balsamic, 2 garlic cloves, 1 tsp oregano, salt & pepper.
Instructions
