Healthy Pumpkin Lentil Curry (Fall Vegetarian) — a healthy halal recipe with 360 calories and 16g protein per serving.
Ingredients
- 1 cup red lentils, rinsed
- 2 cups pumpkin or butternut squash, cubed
- 1 onion, 3 garlic cloves, 1 tbsp ginger
- 2 tsp curry powder, 1 tsp cumin, ½ tsp turmeric, chili flakes
- 1 (13.5 oz) can coconut milk, 1 (15 oz) can diced tomatoes
- 2 cups vegetable broth, spinach or kale, salt
Instructions
- 1Sauté onion, garlic, ginger, and spices. Add pumpkin, lentils, tomatoes, and broth.
- 2Simmer 20-25 min until lentils and pumpkin are soft.
- 3Stir in coconut milk and greens; cook 5 min more. Serve with rice or naan.
