Ingredients
- 1 cup couscous
- 1 (15 oz) can chickpeas
- 2 carrots, 1 zucchini, 1 bell pepper, 1 red onion (chopped)
- 2 tsp ras el hanout or Moroccan spice mix
- 3 tbsp olive oil, 2 tbsp raisins, fresh cilantro and mint
- Lemon wedges, toasted almonds
Instructions
- 1Cook couscous according to package. Fluff and set aside.
- 2Roast or sauté vegetables with spices and chickpeas until tender (15-20 min).
- 3Mix couscous with vegetables, raisins, herbs, and a drizzle of oil.
- 4Top with almonds and serve with lemon.
