Ingredients
- 1 lb carrots, shredded or julienned
- ¼ cup fresh cilantro and parsley, chopped
- ⅓ cup raisins or golden raisins (optional)
- ¼ cup toasted almonds or walnuts, chopped
- Dressing: 3 tbsp olive oil, juice of 1 orange + 1 lemon, 1 tsp honey, ½ tsp ground cumin, ½ tsp paprika, ¼ tsp cinnamon, pinch cayenne, salt & pepper.
Instructions
- 1Whisk dressing.
- 2Toss carrots with herbs, raisins, and nuts. Pour dressing over and mix well. Let sit 10 min for flavors to develop. Serve chilled or at room temp.
