Healthy Mediterranean Chickpea Salad Recipe (Easy) — a healthy halal recipe with 280 calories and 12g protein per serving.
Ingredients
- 2 (15-oz) cans chickpeas, drained & rinsed
- 1 large English cucumber, diced
- 1 red bell pepper, diced
- 2 cups cherry tomatoes, halved
- ½ small red onion, finely diced
- ½ cup Kalamata olives, pitted & halved (optional)
- 4 oz halal feta cheese, crumbled (or omit for vegan)
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped (optional)
- Dressing: ⅓ cup extra-virgin olive oil, juice of 2 lemons, 2 garlic cloves minced, 1 tsp dried oregano, salt & black pepper to taste.
Instructions
- 1Whisk dressing ingredients in a small bowl.
- 2In a large bowl, combine all salad ingredients.
- 3Pour dressing over and toss gently. Let sit 10 min for flavors to meld. Serve chilled or at room temp.
