  • 1 large English cucumber, diced
  • 1 red bell pepper, diced
  • 2 cups cherry tomatoes, halved
  • ½ small red onion, finely diced
  • ½ cup Kalamata olives, pitted & halved (optional)
  • 4 oz halal feta cheese, crumbled (or omit for vegan)
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped (optional)
  • Dressing: ⅓ cup extra-virgin olive oil, juice of 2 lemons, 2 garlic cloves minced, 1 tsp dried oregano, salt & black pepper to taste.
Instructions
