Ingredients
- 1 cup green lentils
- 2 large bunches parsley, finely chopped
- ½ cup fresh mint, chopped
- 4 tomatoes, finely diced
- 4 green onions, sliced
- 1 cucumber, finely diced
- Dressing: ⅓ cup olive oil, juice of 3 lemons, salt & pepper.
Instructions
- 1Cook lentils in water until tender but firm (~20 min). Drain and cool.
- 2Combine cooled lentils with finely chopped herbs and vegetables.
- 3Add olive oil, lemon juice, salt & pepper. Toss thoroughly. Adjust lemon to taste.
