Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 3 garlic cloves, minced
- 1 cup green or brown lentils, rinsed
- 6 cups vegetable broth
- 1 tsp cumin, ½ tsp turmeric
- Juice of 2 lemons (or to taste)
- Fresh parsley or spinach
- Salt & pepper
Instructions
- 1Sauté onion, carrots, garlic. Add spices and lentils; stir 1 min.
- 2Add broth; simmer 30 min until lentils soften.
- 3Add lemon juice and greens. Adjust seasoning. Serve with extra lemon.
