Ingredients
- 4-5 medium potatoes, cubed
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1 (15 oz) can diced tomatoes + 2 cups vegetable broth
- 2 tsp cumin, 1 tsp coriander, ½ tsp cinnamon, salt & pepper
- 3 tbsp olive oil, fresh cilantro
Instructions
- 1Heat oil and sauté onion until soft and golden. Add garlic and spices.
