Ingredients
- 1 cup quinoa, cooked & cooled
- 1 bunch kale, stems removed & massaged
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ cup halal feta or chickpeas
- ¼ cup pumpkin seeds (optional)
- Fresh herbs (parsley, dill)
- Dressing: ¼ cup olive oil, juice of 1 lemon, 1 tbsp tahini or honey, garlic, salt & pepper.
Instructions
- 1Cook quinoa. Massage kale with a bit of lemon/oil to soften.
- 2Mix all ingredients. Toss with dressing. Stores well in fridge 3-4 days.
