Ingredients
  • 1 cup quinoa, cooked & cooled
  • 1 bunch kale, stems removed & massaged
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup halal feta or chickpeas
  • ¼ cup pumpkin seeds (optional)
  • Fresh herbs (parsley, dill)
  • Dressing: ¼ cup olive oil, juice of 1 lemon, 1 tbsp tahini or honey, garlic, salt & pepper.
Instructions
