Ingredients
- 12 oz whole wheat fusilli or penne
- 1 English cucumber, diced
- 2 cups cherry tomatoes, halved
- 1 red bell pepper, diced
- ½ red onion, diced
- ½ cup Kalamata olives, halved
- ½ cup halal feta, crumbled
- ¼ cup fresh oregano and parsley
- Dressing: ⅓ cup olive oil, juice of 2 lemons, 2 tbsp apple vinegar, 2 garlic cloves, 1 tsp oregano, salt & pepper.
Instructions
- 1Cook pasta al dente, drain, and rinse under cold water.
- 2Whisk dressing. Mix pasta with vegetables, olives, herbs, and feta. Toss with dressing.
