Ingredients
  • 2 (15 oz) cans butter beans or giant lima beans, drained
  • 1 large onion, 3 garlic cloves
  • 1 (28 oz) can diced tomatoes
  • 2 tbsp tomato paste, 2 tsp dried oregano, ½ tsp cinnamon (optional)
  • ¼ cup olive oil, fresh dill and parsley, salt & pepper
Instructions
  1. 1Heat oil and sauté onion until soft. Add garlic and oregano.
  2. 2Stir in tomato paste, tomatoes, and beans. Add ½ cup water if needed.
  3. 3Simmer gently 30-35 min until sauce thickens.
  4. 4Finish with plenty of fresh herbs and a drizzle of olive oil. Serve with crusty bread or rice.
