Healthy Greek Giant Bean Gigantes — a healthy halal recipe with 320 calories and 14g protein per serving.
Ingredients
- 2 (15 oz) cans butter beans or giant lima beans, drained
- 1 large onion, 3 garlic cloves
- 1 (28 oz) can diced tomatoes
- 2 tbsp tomato paste, 2 tsp dried oregano, ½ tsp cinnamon (optional)
- ¼ cup olive oil, fresh dill and parsley, salt & pepper
Instructions
- 1Heat oil and sauté onion until soft. Add garlic and oregano.
- 2Stir in tomato paste, tomatoes, and beans. Add ½ cup water if needed.
- 3Simmer gently 30-35 min until sauce thickens.
- 4Finish with plenty of fresh herbs and a drizzle of olive oil. Serve with crusty bread or rice.
