Healthy French Lentil Soup (Du Puy) — a healthy halal recipe with 250 calories and 15g protein per serving.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery, diced
- 3 garlic cloves, minced
- 1.5 cups French green lentils (Du Puy), rinsed
- 1 (15 oz) can diced tomatoes
- 6 cups vegetable broth
- 1 tsp thyme, 1 bay leaf, salt & pepper
- Fresh parsley (optional)
Instructions
- 1Sauté onion, carrots, celery 7 min. Add garlic 1 min.
- 2Add lentils, tomatoes, broth, thyme, and bay leaf.
- 3Simmer 35-40 min until lentils are tender but firm. Remove bay leaf. Finish with parsley and a splash of vinegar.
