Healthy Farro Salad with Roasted Veggies — a healthy halal recipe with 320 calories and 10g protein per serving.

Ingredients
  • 1 cup farro
  • 3 cups vegetable broth
  • 1 zucchini, cubed
  • 1 red bell pepper, cubed
  • 1 eggplant, cubed
  • 1 red onion, wedged
  • 2 tbsp olive oil
  • ¼ cup fresh basil and parsley, chopped
  • Dressing: ⅓ cup olive oil, juice of 1 lemon, 1 tbsp balsamic vinegar, 2 garlic cloves minced, 1 tsp oregano, salt & pepper.
Instructions
  1. 1Cook farro in broth until tender, about 25-30 min. Drain excess and cool slightly.
  2. 2Preheat oven to 425°F. Toss vegetables with olive oil, salt & pepper. Roast 25-30 min until caramelized.
  3. 3Mix farro with roasted vegetables and herbs. Toss with dressing. Serve warm or at room temperature.
