Ingredients
- 2 large eggplants, sliced lengthwise ¼-inch thick
- 15 oz ricotta cheese
- 1 cup shredded mozzarella (halal), ½ cup parmesan or nutritional yeast
- 1 (10 oz) bag spinach, wilted
- 2 cups marinara sauce, 3 garlic cloves, Italian herbs, salt & pepper
- Olive oil for brushing
Instructions
- 1Preheat oven 425°F. Brush eggplant slices with oil and bake 15-20 min until pliable.
