Ingredients
- 1 tbsp olive oil
- 1 lb halal chicken thighs, diced
- 1 onion, diced; 3 carrots, sliced; 2 celery, sliced
- 3 garlic cloves, minced
- ¾ cup wild rice blend
- 7 cups halal chicken broth
- 1 tsp thyme, salt & pepper
- 2 cups kale or spinach
Instructions
- 1Brown chicken; remove. Sauté onion, carrots, celery 6 min. Add garlic.
- 2Return chicken, add rice, broth, and thyme. Simmer 40-45 min until rice is tender.
- 3Stir in greens until wilted. Season and serve.
