Healthy Chicken Lemon Orzo Soup — a healthy halal recipe with 280 calories and 24g protein per serving.
Ingredients
- 1 tbsp olive oil
- 1 lb halal chicken breast or thighs, diced
- 1 onion, diced; 2 carrots, diced; 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups halal chicken broth
- ¾ cup orzo pasta
- Zest and juice of 2 lemons
- 2 cups spinach or kale, chopped
- Fresh dill or parsley, salt & pepper
Instructions
- 1Brown chicken in oil; remove. Sauté onion, carrots, celery 5-7 min. Add garlic.
- 2Return chicken, add broth. Simmer 15 min. Add orzo; cook 8-10 min.
- 3Stir in lemon zest/juice and greens. Season and serve.
