Healthy Cauliflower Couscous Tabbouleh — a healthy halal recipe with 220 calories and 8g protein per serving.
Ingredients
- 1 large cauliflower, riced (about 5-6 cups)
- 2 cups fresh parsley, ½ cup mint, finely chopped
- 4 green onions, 3-4 tomatoes, diced
- ¼ cup olive oil, juice of 2 lemons
- 1 tsp cumin, salt & pepper
- Optional: 1 (15 oz) can chickpeas
Instructions
- 1Pulse cauliflower in food processor to rice consistency or use pre-riced.
- 2Sauté or steam cauliflower rice 5-7 min until just tender. Cool completely.
- 3Mix with chopped herbs, green onions, tomatoes, and chickpeas if using.
- 4Whisk oil, lemon, cumin, salt, and pepper. Toss with tabbouleh. Adjust seasoning.
