Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 1.5 lbs carrots, chopped
- 3 garlic cloves, minced
- 1 cup red lentils, rinsed
- 5 cups vegetable broth
- 1 tsp cumin, ½ tsp turmeric, ½ tsp coriander
- Lemon juice and fresh parsley
Instructions
- 1Sauté onion 5 min. Add garlic, carrots, and spices 2 min.
- 2Add lentils and broth. Simmer 25-30 min until lentils and carrots are soft.
- 3Blend partially or fully. Finish with lemon juice and parsley.
