Ingredients
- 2 tbsp olive oil or coconut oil
- 1 large onion, chopped
- 1.5 lbs carrots, chopped
- 3 garlic cloves, minced
- 2 tbsp fresh ginger, grated
- 1 tsp turmeric, ½ tsp cumin
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt & pepper, fresh cilantro
Instructions
- 1Sauté onion 5 min. Add garlic, ginger, and spices 2 min.
- 2Add carrots and broth. Simmer 25-30 min until carrots are soft.
- 3Blend smooth. Stir in coconut milk and heat gently. Garnish with cilantro.
