Ingredients
  • 1 medium butternut squash, peeled and cubed
  • 1 large onion, 3 garlic cloves, 1 tbsp ginger
  • 2 carrots, 1 (15 oz) can chickpeas
  • 1 (15 oz) can diced tomatoes + 1 cup vegetable broth
  • 2 tsp ras el hanout, 1 tsp cumin, ½ tsp cinnamon, ½ tsp turmeric
  • 3 tbsp olive oil, handful dried apricots, fresh cilantro, lemon
Instructions
  1. 1Heat oil and sauté onion 5 min. Add garlic, ginger, and spices.
  2. 2Add squash, carrots, chickpeas, tomatoes, broth, and apricots.
  3. 3Simmer covered 30-35 min until squash is tender.
  4. 4Finish with lemon juice and cilantro. Serve with couscous.
