Healthy Butternut Squash Tagine (Vegetarian) — a healthy halal recipe with 310 calories and 10g protein per serving.
Ingredients
- 1 medium butternut squash, peeled and cubed
- 1 large onion, 3 garlic cloves, 1 tbsp ginger
- 2 carrots, 1 (15 oz) can chickpeas
- 1 (15 oz) can diced tomatoes + 1 cup vegetable broth
- 2 tsp ras el hanout, 1 tsp cumin, ½ tsp cinnamon, ½ tsp turmeric
- 3 tbsp olive oil, handful dried apricots, fresh cilantro, lemon
Instructions
- 1Heat oil and sauté onion 5 min. Add garlic, ginger, and spices.
- 2Add squash, carrots, chickpeas, tomatoes, broth, and apricots.
- 3Simmer covered 30-35 min until squash is tender.
- 4Finish with lemon juice and cilantro. Serve with couscous.
