Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 tbsp fresh ginger, grated
- 1 large butternut squash (~2 lbs), peeled and cubed
- 4 cups vegetable broth
- 1 cup coconut milk
- ½ tsp cinnamon, salt & pepper
Instructions
- 1Sauté onion 5 min. Add ginger and squash; cook 3 min.
- 2Add broth and simmer 25-30 min until squash is tender.
