Ingredients
- 1 cup bulgur wheat
- 2 cups boiling water
- 2 tomatoes, finely diced
- 1 cucumber, finely diced
- 1 large bunch parsley, chopped
- ½ cup fresh mint, chopped
- 4 green onions, sliced
- Dressing: ¼ cup olive oil, juice of 2-3 lemons, salt & pepper.
Instructions
- 1Soak bulgur in boiling water 15 min until tender. Drain any excess and cool.
- 2Mix bulgur with diced vegetables and chopped herbs.
- 3Add olive oil, lemon juice, salt & pepper. Toss and adjust seasoning.
