Ingredients
- 1 cup fine bulgur wheat
- 2 cups boiling water
- 2-3 large tomatoes, finely diced
- 1 English cucumber, finely diced
- 1 bunch parsley (about 2 cups chopped)
- ½ cup fresh mint, chopped
- 4-5 green onions, sliced
- Juice of 2-3 lemons
- ¼-⅓ cup olive oil
- Salt & pepper to taste
Instructions
- 1Soak bulgur in boiling water 10-15 min until tender. Drain any excess and fluff. Cool.
- 2Mix bulgur with finely chopped veggies & herbs. Add lemon juice, olive oil, salt & pepper. Toss well. Adjust seasoning. Serve chilled.
