Ingredients
  • 1 cup fine bulgur wheat
  • 2 cups boiling water
  • 2-3 large tomatoes, finely diced
  • 1 English cucumber, finely diced
  • 1 bunch parsley (about 2 cups chopped)
  • ½ cup fresh mint, chopped
  • 4-5 green onions, sliced
  • Juice of 2-3 lemons
  • ¼-⅓ cup olive oil
  • Salt & pepper to taste
Instructions
  1. 1Soak bulgur in boiling water 10-15 min until tender. Drain any excess and fluff. Cool.
  2. 2Mix bulgur with finely chopped veggies & herbs. Add lemon juice, olive oil, salt & pepper. Toss well. Adjust seasoning. Serve chilled.
