Healthy Bulgur Pilaf with Chickpeas — a healthy halal recipe with 340 calories and 13g protein per serving.

Ingredients
  • 1 cup coarse bulgur, rinsed
  • 1 (15 oz) can chickpeas, drained
  • 1 large onion, diced; 2 tomatoes, chopped
  • 3 garlic cloves, 2 tbsp olive oil
  • 1 tsp cumin, ½ tsp allspice, ½ tsp cinnamon, salt & pepper
  • 2 cups vegetable broth
  • Fresh parsley and mint, lemon juice
Instructions
  1. 1Heat oil and sauté onion until soft. Add garlic and spices for 1 min.
  2. 2Stir in tomatoes, chickpeas, and bulgur. Add broth and bring to simmer.
  3. 3Cover and cook on low 20-22 min until bulgur is tender and liquid absorbed. Fluff, add lemon juice and plenty of fresh herbs.
