Ingredients
  • 1 cup coarse bulgur wheat
  • 2 cups vegetable broth
  • 1 small onion, diced
  • 1 carrot, diced
  • 1 tomato, diced
  • 2 tbsp olive oil
  • ¼ cup fresh parsley, chopped
  • 1 tsp cumin, salt & pepper
Instructions
  1. 1Sauté onion and carrot in olive oil until softened (5 min).
