Ingredients
- 1 cup coarse bulgur wheat
- 2 cups vegetable broth
- 1 small onion, diced
- 1 carrot, diced
- 1 tomato, diced
- 2 tbsp olive oil
- ¼ cup fresh parsley, chopped
- 1 tsp cumin, salt & pepper
Instructions
- 1Sauté onion and carrot in olive oil until softened (5 min).
- 2Add bulgur, tomato, cumin, salt & pepper. Stir 1-2 min.
- 3Pour in broth, bring to boil, then simmer covered 15-20 min until liquid is absorbed. Fluff and stir in parsley. Serve warm.
