  • 3 medium beets, roasted or boiled

  • Fresh mint, walnuts for topping, pita or veggies for serving
Instructions
  1. 1Roast beets at 425°F for 35-45 min until tender. Cool and grate or mash.
  2. 2Mix yogurt with garlic, lemon, mint, salt, and pepper. Fold in beets.
  3. 3Drizzle with olive oil and top with chopped walnuts and mint. Chill slightly before serving.
