Ingredients
- 3 medium beets, roasted or boiled
- 2 cups plain Greek yogurt (or plant-based)
- 2 garlic cloves, minced

Instructions
- 1Roast beets at 425°F for 35-45 min until tender. Cool and grate or mash.
- 2Mix yogurt with garlic, lemon, mint, salt, and pepper. Fold in beets.
- 3Drizzle with olive oil and top with chopped walnuts and mint. Chill slightly before serving.
