Ingredients
- 3 ripe bananas, mashed (about 1¼ cups)
- 1½ cups whole wheat flour
- ½ cup oat flour
- 1 tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- 2 eggs
- ⅓ cup unsweetened applesauce
- ¼ cup olive oil
- 1 tsp vanilla extract
- ¾ cup chopped walnuts

Instructions
- 1Preheat oven to 350°F (175°C). Grease 9x5 loaf pan.
- 2Whisk dry ingredients (flours, baking soda, cinnamon, salt).
- 3Mix mashed bananas, eggs, applesauce, oil, and vanilla until smooth.
- 4Combine wet and dry until just mixed. Fold in walnuts.
- 5Pour into pan, add optional banana slices on top. Bake 50-55 minutes until toothpick clean. Cool completely before slicing.
